It’s that time of year when many of us celebrate St. Patrick’s Day! Here is a great recipe to help you get your green on. Best of all, this cake can be mixed up in the pan you melt the chocolate and butter in which keeps dishwashing to a minimum. Guinness chocolate cake with a Guinness glaze is a great way to celebrate your Irish heritage!
The Recipe

1 cup chopped                            175 grams chopped
bittersweet chocolate                      bittersweet chocolate
1/4 cup butter                             56 grams butter
1/4 cup oil                                  56 grams oil
1/2 cup brown sugar                      99 grams brown sugar
1/4 cup sugar                              49 grams sugar
2 large eggs                               136 grams eggs
1 teaspoon salt                           4 grams salt
1/2 teaspoon baking soda                3 grams baking soda
1/2 cup Guinness                         120 grams Guinness
1¼ cups all purpose flour                 150 grams all purpose flour
glaze:
2 cups powdered sugar                  250 grams powdered sugar
6 tablespoons Guinness                 84 grams Guinness
Directions
Heat the oven to 325F. Line an 8″square pan with foil and then butter or oil the foil. Melt the butter and chocolate with the oil over low heat.
Remove from the heat and add the sugars, eggs, salt, and baking soda.
Stir in the Guinness. The mixture will foam a little bit and that’s perfectly fine.
Finally, add the flour and mix just to combine. Pour the mixture into the prepared pan and bake for 25 to 30 minutes.
Let cool completely.
While the cake cools, make the glaze. Whisk the powdered sugar and Guinness together until completely smooth.
Cover until ready to glaze the cake.
Spread the glaze evenly over the top of the cake, allowing it to drip down the sides. This Guinness chocolate cake can either be served immediately or allowed to stand until the glaze firms up.
Alternatives
It is not necessary to make this cake only with Guinness. Any good, proper stout will do!
You can easily add chocolate chips or chopped nuts to this cake. Simply stir in 1½ cups of either along with the flour.
