St. Francis of Assisi almond cookies are chewy little bites of deliciousness. Supposedly the favorite cookies of the little man from Assisi, they are quick to make and delightful to eat. We arrive in Assisi this afternoon and it is the feast day of St. Francis so these cookies will be everywhere!

Biscotti
Nothing says Italy quite like biscotti. Also known as cantuccini in Tuscany, these cookies come from Prato, just north of Florence — the starting point of our Italian journey! And what an amazing journey so far! There is amazing art and architecture and shop windows filled with delicious pastries!
Enjoy these biscotti with coffee or the Italian way with a glass of Vin Santo! We certainly will!
Date Filled Cookies
I love to make elegant pastries but when I visit my family in Maine I always want desserts from childhood. These date filled cookies fill the bill! The cookies are soft and tender and I make sure to put as much filling as possible in each cookie!
Cappuccino Brownies
Of all the delicious treats I served in my bakery over the years, these cappuccino brownies were definitely one of the most popular items. These brownies no longer have coffee in them, ( I found I liked the brownies better without it but you can certainly add it if you like — check out the alternatives section of this post) but they still have white “froth” on the top to mimic the fabulous pick me up!
Gluten Free Chocolate Almond Cookies
These gluten free chocolate almond cookies are really easy to make, fudgy and delicious. Best of all, they are perfect for anyone who can’t have flour.
Almond Raspberry Blondies
Blondies are one of my favorite bar type cookies and these almond raspberry blondies are a fantastic variation. It takes 10 minutes to get them into the oven and in under an hour you have a delicious snack. Make a double batch because these will disappear quickly!
Pecan Cream Cheese Tea Cookies
These are elegant cookies that are perfect with afternoon tea or as a late night snack. The dough for pecan cream cheese tea cookies can be made ahead and then you can slice and bake as many or a few as you need (or want!). Simple. Easy. Delicious.
Orange Tuiles
Orange tuiles are a fantastic way to dress up any dessert. They are buttery, crunchy and elegant. My friend and mentor Morgan Larsson shared this recipe with me many years ago. He is an incredible pastry chef and a fantastic person. Thank you Morgan!
Linzer Cookies
Linzer cookies are lovely, elegant cookies that look harder to make than they actually are — and they’re delicious! I’m a traditionalist so I make these cookies with toasted hazelnuts, but almonds are also delicious.
